The Castro de Balar winery is a women-led operation; Adega Gonzalo Martinez runs the show along with her sister and mother. Located in Rarís, the farm is in the northern part of the sub-zone of the Ribeira do Ulla, a few kilometers south of the city of Santiago de Compostela. The vineyard consists of a single hectare of Albariño vines growing in decomposed granite, from which they produce one singular wine. The vines are about 15 year old on average. They carefully monitor yields, from the flowering until maturity, working in the vineyards all year long. The grapes are harvested by hand with a careful selection of the clusters.
Once in the cellar, the grapes are destemmed and macerated for 7 hours at a temperature of 6ºC. Subsequently the alcoholic fermentation is carried out for 14 days at a constant temperature of 16º. After this fermentation, the wine rests on its lees for a minimum of four months, after which is filtered and it is left to rest until the optimum moment for bottling, generally in June or July of the following year.
