Dignitat is located in the Catalan region of Penedès, where Mediterranean winds blow north-west over the Montserrat mountains, protecting the land from the cold northerly Pyrenean winds. This estate has been making Cava in the area since 1920, and continues to thrive with fifth-generation winemaker Alex Ruiz-Masachs at the helm.
The winery is located specifically between Central and Alt Penedès, where the climate is typically Mediterranean with warm summers and mild winters, and gets plenty of sunshine to ensure optimal ripening of the grapes. The annual average rainfall is 525 mm (around 30 days per year), all resulting in a paradise for grape-growing!
Dignitat uses the traditional hand picking system with baskets. The fruit for this Cava comes from their own vineyards and is a blend of Xarel·lo, Macabeo, and Parellada, softly pressed in a pneumatic press, with only the free run juice being used. Each grape variety produces a base wine which is made separately in steel tanks at controlled temperatures. The wine then undergoes its second fermentation in the bottle and spends a minimum of 10 months on the fine lees.
