Born from a passion for traditional agave spirits and for sustainability, VIVIR Tequila is produced in partnership with fifth generation, family-owned Casa Maestri Distillery in Jalisco. Using traditional methods, Blue Weber Agave plants grown in the highlands of Jalisco are harvested at full maturity after 9 years, which maintains crop levels which in turn help support the local wildlife and ecosystems. Traditional clay ovens are used to roast the agave and only natural volcanic spring water that rises from a well on the property of the distillery is used. There are zero additives, so what is experienced is the true expression of the agave plant.
The team at VIVIR Tequila prioritizes what they call proactive sustainability. Apart from just producing delicious tequila, their goal is to help secure a future for the cultivation of agave and the making of traditional agave sprits. Operating on a zero waste policy, all spent materials from the production are composted, donated to local farmers and used to cultivate new agave plants. A percentage of the estate grown agave crop is spared from harvest and allowed to flower so that the seeds can be collected for new plantings. VIVIR’s vision for sustainability is holistic, therefore they work with local Jimadors full-time to ensure fair wages and to reinforce their responsibility to the local communities.
